Shrimp and Spinach Pasta

Cheesy Spinach and Shrimp Pasta

Ingredients

  • 1 box Pasta penne, bowtie or linguini
  • 2 lbs Shrimp peeled and deveined
  • 6 cups Fresh Spinach
  • 1 cup Mild cheddar cheese, shreaded
  • 4 cloves Garlic (chopped)
  • 1 cup Sharp Cheddar cheese, grated
  • 1 cup Heavy whipping cream
  • 1 cup Reserved pasta water
  • 2 tbsp Extra virgin olive oil
  • 6 tbsp butter
  • 2 tbsp Creole Seasoning (divided)
  • 2 tsp Old Bay (divided)
  • ½ tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Garlic Powder
  • 1 tsp Red Pepper Flakes
  • 1 tsp Onion Powder

Instructions

  1. Clean and rinse shrimp with lemon water, pat dry, toss with oil and season with (1) tablespoon creole seasoning, (1)tsp Old Bay and remaining seasoning, set aside

  2. Bring 8 cups salted water to a boil, add pasta (cook according to box instructions).

  3. Heat oil in frying pan, add butter, once melted (do not burn), add garlic and saute for 1 minute

  4. Sprinkle remaining (1 )tbsp creole seasoning, remaining (1 )tsp old bay seasoning into the oil and butter, stir

  5. Drain pasta, reserving 1 cup of pasta water

  6. Add pasta to pan and toss pasta in the oil, butter, garlic, old bay and creole seasoning

  7. Introduce spinach into the pan with pasta and stir until wilted

  8. Add cheese and toss with the spinach and pasta

  9. Pour heavy whipping cream, stir and introduce shrimp into pan, toss with all ingredients to coast the shrimp. Serve immediately
