Buffalo Chicken Wings

Ingredients
- 3 lbs chicken wings flats and drums
- 3 cups canola oil
- 1/3 cup dijon mustard
- 1/4 cup honey
- 3 cups of flour
- 1 cup cornstarch
- 2 tablespoons hot sauce
- 1 tablespoon mayonaise
- 1 teaspoon garlic powder
- pinch of cayenne pepper
- kosher salt and fresh ground black pepper
- Carrot and celery sticks for serving
- Ranch or blue cheese dressing for dipping
- Parsley for garnish
Instructions
- Cut wings at the joints to make 3 pieces and discard tip
- Pour canola oil into a large frying pan
- Preheat oven to 400º F
- In a large bowl, toss chicken wings with salt, pepper and garlic powder
- Dregde wings in flour/cornstarch mixture and shake off excess
- Carefully place wings in the hot oil and fry approximately 3 minutes each side
- Whisk together the honey, dijon mustard, hot sauce, mayonnaise, garlic powder, cayenne pepper and parsley
- Remove wings from frying pan and place in the bowl with sauce mixture and coat well
- Place wings on a greased baking sheet and bake for 15-20 minutes each side
- Broil on high for 2 minutes each side
- Garnish with parsley and serve while hot
