Ingredients

  • 3 lbs chicken wings flats and drums
  • 3 cups canola oil
  • 1/3 cup dijon mustard
  • 1/4 cup honey
  • 3 cups of flour
  • 1 cup cornstarch
  • 2 tablespoons hot sauce
  • 1 tablespoon mayonaise
  • 1 teaspoon garlic powder
  • pinch of cayenne pepper
  • kosher salt and fresh ground black pepper
  • Carrot and celery sticks for serving
  • Ranch or blue cheese dressing for dipping
  • Parsley for garnish

Instructions

  1. Cut wings at the joints to make 3 pieces and discard tip
  2. Pour canola oil into a large frying pan
  3. Preheat oven to 400º F
  4. In a large bowl, toss chicken wings with salt, pepper and garlic powder
  5. Dregde wings in flour/cornstarch mixture and shake off excess
  6. Carefully place wings in the hot oil and fry approximately 3 minutes each side
  7. Whisk together the honey, dijon mustard, hot sauce, mayonnaise, garlic powder, cayenne pepper and parsley
  8. Remove wings from frying pan and place in the bowl with sauce mixture and coat well
  9. Place wings on a greased baking sheet and bake for 15-20 minutes each side
  10. Broil on high for 2 minutes each side
  11. Garnish with parsley and serve while hot
