Fried Yellow Squash and Mushrooms

Ingredients

  • 5 yellow squash
  • 1 8 oz package sliced mushrooms
  • 1 tablespoons canola oil
  • 1 tablespoon butter
  • 1 cup sautéed diced onions
  • 1 teaspoon fresh rosemary leaves finely chopped
  • salt and freshly ground black pepper to taste

Instructions

  1. Slice squash
  2. In a large skillet, sauté squash in oil and butter.
  3. Slightly brown; add onions and mushrooms. Season with salt and pepper
  4. Cook over medium heat 3-5 more minutes but do not allow squash to become mushy.
  5. Sprinkle with rosemary and keep warm until served.
